Broccoli & Blue Cheese Fritters

These fritters make the perfect warming afternoon snack in winter! So cheesy and delicious - 2-3 of these will surely keep you satisfied until dinner (while sneaking in an extra serve of veg). They also make a great meat-free dinner meal when served with a salad and sweet potato mash.

INGREDIENTS:

- 1 head of broccoli, roughly chopped

- 2 eggs

- 1 cup grated cheese

- 100g strong blue cheese

- 1/4 cup EVOO

- 1/2 cup wholemeal flour

- 1tsp ground tumeric

- 1tsp ground cumin

- pinch of salt

METHOD:

1. Steam the broccoli and set aside to cool

2. Combine all other ingredients in a mixing bowl

3. Place the steamed and cooled broccoli into a food processor and blitz well. Stir through the cheese mixture

4. Heat a drizzle of EVOO in a fry pan and use a dessert spoon to dollop the batter into the pan. Cook for 2 minutes each side or until golden brown and crispy
