Ingredients
- 1 x small wholemeal pita
- 1/2 cup crushed tomatoes
- 1 clove garlic
- 200g pumpkin, roasted
- 30g cheddar cheese
- 20g goats cheese
- 1 tb pine nuts
- 1 sprig rosemary
- 2 sprigs thyme
Method
1. Heat oven to 180 degrees Celcius
2. Spread crushed tomatoes and crushed garlic evenly over pita with the back of a spoon
3. Then top with grated cheese, roasted pumpkin, goats cheese, pine nuts and fresh herbs
4. Bake in the oven for 20 minutes or until base is nice and crispy
5. Serve with 2 cups of green salad
